We use natural lump charcoal rather than briquettes, which burns hotter and cleaner, giving our meats that distinctive smoky flavour without any chemical aftertaste. The grill is brought to temperature well before service begins, ensuring an even, intense heat that sears the outside of each skewer instantly.
Our grill chefs know every cut intimately. Kofta is placed closest to the coals for a fast, fierce sear that locks in the juices. Shish taouk sits slightly higher, where the gentler heat cooks the chicken through without drying it out. Lamb cubes are rotated frequently, developing a rich crust on all sides while staying tender and blushing pink in the centre.
